4. Leaving the mother tinctures to mature

For the mother tincture to develop its characteristic aroma, it is essential to give it sufficient time for its individual maturing process. At CERES, the mother tinctures are filled into 25 l glass carboys after pressing and subsequent filtering. Then the glass carboys are stored in the CERES tincture cellar for 2 to 3 years. At a temperature of between 16 and 17 °C, and in complete darkness and quietness, the tinctures undergo a maturing process indispensable for the high quality of CERES mother tinctures. In our experience, tinctures need a certain amount of time before the transformation from plant to medicine is complete. The maturing process causes very slow oxidation, as is the case with wine. The special type of storage of the tinctures lends them their typical full flavour and their strong efficacy.
Only when the maturing period is complete are the tinctures further processed for the consumer.
